PASTA SALAD

A chilled pasta salad with just the right kick. Tossed with crunchy veggies and a bold Ebesse Fion Fion dressing, it’s the kind of side you’ll want with grilled fish, or fried shrimp. Simple, fresh, and perfect for weekends, parties, or a quick lunch on its own.

INGREDIENTS
1 cup small pasta (elbow or fusilli)
¼ small red onion, finely chopped
½ small tomato, diced
¼ cup canned corn, drained
¼ cucumber, chopped
¼ red bell pepper, diced
1 tbsp Ebesse Fion Fion (adjust to taste)
2 tbsp olive oil
1 tsp lemon juice or vinegar
Salt and black pepper, to taste
1 tbsp grated cheese (optional)
1 tbsp mayonnaise (optional)
Fresh parsley or cilantro, for garnish
DIRECTIONS
Cook the pastaBoil the pasta in salted water according to package directions until al dente. Drain and rinse under cold water to cool.
Make the dressing
In a large bowl, whisk together the olive oil, Ebesse Fion Fion, and lemon juice.
Toss the sa
Add the cooled pasta to the bowl. Toss to coat well with the spicy dressing.
Add the vegetables
Mix in the onions, tomatoes, corn, cucumber, and bell peppers. Toss gently to combine.
Season and garnish
Add salt and black pepper to taste. Stir in the cheese if using. Finish with a sprinkle of fresh parsley or cilantro.
Chill and serve
Refrigerate for at least 20 minutes before serving to let the flavors meld.
