WHY EBESSE?

The Vanishing Spice Wrack

To truly understand West African cuisine, you have to look beyond the surface. Deep within coastal West African cooking lies a rich landscape of flavours—botanicals like alligator pepper (Grains of paradise), grains of selim, and other indigenous aromatics. Yet many of these ingredients are slowly disappearing from everyday kitchens.
Recently, while visiting a local African market, our founder spotted alligator pepper tucked away on a shelf
"I pointed to it out of pure excitement. The shop owner was just as surprised that I knew what it was as I was to find it in her store—because it has become so uncommon."
It was a rare, unspoken connection over a flavour that is quietly being forgotten.
Today, many people still recognize these spices in the comforting taste of a stew or pepper sauce, but the ingredients themselves—their names, origins, and uses—are becoming less familiar with each generation.
EBESSE exists to help preserve that knowledge, celebrate these ingredients, and keep our connection to them alive.

Complexity, Simplified

Preparing a single meal can take hours; some requiring specialty ingredients, fresh aromatics, and flavour balances that are often passed down rather than written down.
But modern life moves fast.
We know the feeling of craving a rich palmnut stew or a fiery pepper sauce after a long day, only to realize you don't have the time or energy to build those flavour from scratch.
EBESSE removes that barrier. What took generations to master, we've made accessible. Our premium chili oil and seasoning blends bring authentic depth to your cooking with less effort. No guesswork. No complicated prep. Just authentic West African flavour.
