KONKADA

A beloved street treat across Togo, Ghana, and Benin, Konkada is a crunchy peanut brittle made from roasted groundnuts and caramelized sugar. It’s sweet, nutty, and delightfully addictive.

INGREDIENTS


• 1 cup roasted peanuts (peeled and whole or halved)

• 1 cup granulated sugar

• 1–2 tablespoons water

• A pinch of salt

• Optional: grated ginger or a splash of lime juice for extra flavor

• Oil or butter (for greasing surface)

 

 

DIRECTIONS


**Prepare your surface**: Lightly grease a flat tray, plate, or clean countertop with oil or butter. Keep a rolling pin or flat spatula nearby.

 

**Caramelize the sugar**: In a dry, heavy-bottomed pan, add the sugar and a spoonful of water. Heat gently over medium-low without stirring too much. Let the sugar melt slowly and turn a golden amber color. Swirl the pan gently to help it melt evenly. Be careful—it burns quickly.


**Add peanuts and mix**: Once the sugar has fully melted and darkened slightly, quickly stir in the peanuts and a pinch of salt. Mix well so all the nuts are coated evenly. You can also stir in grated ginger or lime juice for a fragrant twist.


**Shape the brittle**: Immediately pour the hot mixture onto the greased surface. Use a greased rolling pin or the back of a spoon to flatten it quickly before it hardens. Press to desired thickness.


**Cool and cut**: Allow it to cool for a few minutes, then cut into squares, rectangles, or break into shards before it becomes too hard.
